Ingredients

Scale

Steak Bites

  • 1.5 lbs sirloin or ribeye steak, cut into bite-sized pieces
  • Salt and freshly cracked black pepper, to taste
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 4 cloves garlic, minced

Parmesan Cream Sauce

  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 0.5 cup freshly grated Parmesan cheese
  • 0.25 tsp cracked black pepper
  • Pinch crushed red pepper flakes (optional)
  • Salt, to taste

Garnish

  • 1 tbsp fresh parsley, chopped

Instructions

  1. Prepare the Steak: Pat the steak cubes dry using paper towels to remove excess moisture and season all sides evenly with salt and freshly cracked black pepper. Let the steak rest at room temperature for 20 to 30 minutes to ensure even cooking.
  2. Sear the Steak Bites: Heat 1 tablespoon olive oil in a large cast-iron skillet over high heat. Add the steak bites in a single layer and sear for 2–3 minutes on each side, working in batches if necessary to avoid overcrowding the pan. Once browned, transfer the steak to a plate and cover loosely to keep warm.
  3. Sauté Garlic Butter for Steak: Reduce the heat to medium. Add 2 tablespoons unsalted butter and 4 cloves minced garlic to the skillet. Stir continuously for about 30 seconds until fragrant. Return the steak bites to the skillet and toss them gently to coat with the garlic butter. Remove the steak again to prevent overcooking.
  4. Make the Creamy Parmesan Sauce: In the same skillet, melt another 2 tablespoons of butter over medium heat. Add 2 cloves minced garlic and sauté for 30 seconds until fragrant. Pour in 1 cup heavy cream and let the mixture simmer gently for 2–3 minutes until slightly thickened.
  5. Incorporate Parmesan and Seasonings: Stir in 0.5 cup freshly grated Parmesan cheese, 0.25 teaspoon cracked black pepper, and a pinch of crushed red pepper flakes if using. Continue stirring until the sauce is smooth and creamy. Adjust salt to taste.
  6. Toss Steak in Sauce: Return the seared steak bites to the skillet and toss them thoroughly in the creamy Parmesan sauce. Heat together for 1–2 minutes to meld the flavors without overcooking the steak.
  7. Garnish and Serve: Sprinkle 1 tablespoon of freshly chopped parsley over the steak bites. Serve immediately, pairing with your favorite sides for a complete meal.

Notes

  • Allowing the steak to come to room temperature helps it cook more evenly.
  • Using a cast-iron skillet ensures a better sear and flavor development.
  • Don’t overcrowd the pan while searing to avoid steaming the meat.
  • Optional crushed red pepper flakes add a gentle heat but can be omitted if preferred.
  • Serve with mashed potatoes, steamed vegetables, or a fresh salad for a balanced meal.
