Ingredients

Scale

Noodles

  • 16 ounces brown rice noodles

Sauce

  • 3 large cloves garlic or 45 small, finely minced
  • 1 tablespoon fresh grated ginger
  • 1 tablespoon oil (such as olive oil)
  • 2/3 cup creamy peanut butter
  • 4 tablespoons low sodium tamari or soy sauce
  • 1/31 cup hot water (hot water mixes with peanut butter more easily than cold)
  • 1 tablespoon rice vinegar
  • 1 tablespoon toasted sesame oil
  • 12 tablespoons sriracha
  • 12 tablespoons maple syrup or honey
  • 1/2 teaspoon red pepper flakes (optional for spice)
  • Optional: 2 teaspoons chili garlic sauce

Instructions

  1. Boil Water: Bring a large pot of water to a rolling boil to prepare for cooking the noodles.
  2. Cook Noodles: Add the brown rice noodles to the boiling water and cook according to package instructions until al dente. Drain and set aside.
  3. Saute Garlic: Finely mince the garlic cloves. Heat 1 tablespoon of oil in a sauté pan over low heat and add the minced garlic.
  4. Saute Garlic and Ginger: Cook the garlic slowly for about 2 minutes until golden brown. Add the grated ginger and sauté for an additional 1 minute to release their flavors.
  5. Prepare Sauce: Remove the pan from heat then add the peanut butter, tamari or soy sauce, rice vinegar, sesame oil, sriracha, maple syrup or honey, red pepper flakes, and optional chili garlic sauce to the pan.
  6. Mix Sauce: Begin whisking all the sauce ingredients together, starting with 1/3 cup of hot water to help smooth out the peanut butter. Gradually add more hot water up to 1 cup to reach your preferred sauce consistency.
  7. Taste and Adjust: Taste the sauce and adjust seasoning by adding more soy sauce for saltiness, sriracha for heat, or any other ingredient according to your preference.
  8. Combine Sauce with Noodles: Add about half of the prepared sauce to the cooked noodles and toss gently to coat evenly. Reserve the remaining sauce for extra flavor or to serve with additional ingredients like chicken, tofu, or vegetables.
  9. Taste and Add More Sauce: Start by mixing only half the sauce and add more if you desire a saucier dish.
  10. Serve: Plate the noodles and garnish with crushed peanuts, sliced scallions, and a sprinkle of red pepper flakes. Enjoy as is or with sides of your choice.

Notes

  • Use hot water when mixing the sauce to ensure the peanut butter blends smoothly.
  • Adjust the spiciness by varying the amount of sriracha and red pepper flakes.
  • For added protein, serve with grilled chicken, baked tofu, or stir-fried vegetables.
  • Brown rice noodles provide a gluten-free option, but check package labels to ensure suitability.
  • Leftover sauce can be stored in the refrigerator for up to 3 days and gently reheated.
