  • 1 lime

Instructions

  1. Sauté the Onion: Heat the olive or avocado oil in a pot over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes, stirring occasionally to prevent burning.
  2. Add Aromatics and Curry Paste: Stir in the Thai red curry paste, chopped garlic, ginger, and optional lemongrass. Cook the mixture for 1-2 minutes until fragrant, stirring frequently to release the flavors.
  3. Add Liquids and Simmer: Pour in the chicken broth and canned coconut milk. Stir well to combine all ingredients, then bring the soup to a boil over medium-high heat.
  4. Cook the Raviolis: Add the frozen raviolis to the boiling soup. Cook them according to package instructions, usually around 5-6 minutes, until they are tender and cooked through. Stir occasionally to prevent sticking.
  5. Finish with Greens and Garnishes: Once raviolis are cooked, stir in the chopped spinach and allow it to wilt softly for about 1 minute. Remove the pot from heat and garnish the soup with sliced green onions, chopped cilantro, and a squeeze of fresh lime juice before serving hot.
