Instructions

  1. Roast the Garlic: Preheat the oven to 400°F (200°C). Slice the tops off the garlic bulbs, drizzle them with olive oil, wrap them tightly in foil, and roast for 30 minutes until the garlic becomes golden and soft, releasing its sweet and mellow aroma.
  2. Sauté the Aromatics: Heat a drizzle of olive oil in a large pot over medium heat. Add the chopped onions and cook for 5–7 minutes until they turn translucent and emit a fragrant sweetness, building the flavor base of the soup.
