Ramen Noodles and Seasoning

  • 1 pack of ramen seasoning

Sauce and Flavorings

  • 1 whole egg
  • 2 egg yolks
  • 60g parmesan cheese, finely grated
  • 1.5 tbsp Gochujang (Korean chili paste)
  • 1/2 tsp black pepper

Protein and Aromatics

  • 4 strips of bacon, thinly sliced
  • 4 cloves garlic, minced

Garnish

  • Chives, chopped
  • Egg yolk (optional, for serving)
  • Sesame seeds (optional)

Instructions

  1. Prepare Ingredients: Finely grate the parmesan cheese and thinly slice the bacon strips. Set these aside to have them ready when cooking.
  2. Make the Sauce: In a mixing bowl, whisk together the whole egg, two egg yolks, grated parmesan cheese, Gochujang paste, and black pepper until they form a smooth paste. This will be your creamy carbonara sauce with a spicy twist.
  3. Cook Ramen: Boil the ramen noodles according to the package instructions. Drain, reserving some of the cooking water for adjusting sauce consistency later.
  4. Cook Bacon and Garlic: Heat a pan over medium-high heat and fry the sliced bacon for about 5 minutes, until the fat has rendered and the bacon is crispy on the outside yet slightly chewy. Add the minced garlic and stir-fry for an additional 30 seconds to release its aroma.
  5. Combine Ingredients: Add the cooked ramen noodles to the pan with the bacon and garlic. Pour in the prepared sauce paste and sprinkle in the ramen seasoning packet. Turn off the heat to prevent the egg from scrambling.
  6. Emulsify Sauce: Stir the ingredients vigorously to emulsify the sauce, creating a creamy texture. Add reserved ramen cooking water one tablespoon at a time, stirring until the sauce reaches the perfect creamy consistency that coats the noodles.
  7. Serve and Garnish: Plate the ramen carbonara, grate additional parmesan cheese over the top, garnish with chopped chives, a raw egg yolk if desired, and sprinkle sesame seeds for an extra touch. Enjoy immediately while warm.
