Sun-Dried Tomato Base
- 1 jar (8 oz) sun-dried tomatoes in oil
Aromatics & Herbs
- 1 to 2 grated garlic cloves
- 1 small finely diced shallot
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp smoked or sweet paprika
- 1 to 2 tsp red chili flakes
Cheese & Garnish
- 1/2 cup grated parmesan cheese
- Fresh basil leaves, for garnish
- Prepare Sun-Dried Tomato Oil: Drain the oil from the jar of sun-dried tomatoes into a pot; it should measure about 1/2 cup. Roughly chop 1/3 cup of the sun-dried tomatoes and add them to the oil to enhance the tomato flavor.
- Infuse Aromatics: Add the grated garlic, finely diced shallot, dried oregano, dried thyme, smoked or sweet paprika, and red chili flakes to the pot with the oil and chopped tomatoes. Heat over low heat and let it simmer gently for about 5 minutes, warming the oil and releasing the flavors from the aromatics.
- Assemble the Dip: Place the grated parmesan cheese in a serving bowl. Carefully pour the hot flavored oil mixture over the cheese, allowing it to melt slightly and infuse the dip with rich flavors.
- Garnish and Serve: Top the dip generously with fresh basil leaves for brightness and herbaceousness. Serve immediately with your favorite bread for dipping.
Notes
- Use smoked paprika for a deeper, smoky flavor or sweet paprika for a milder taste.
- Adjust the amount of chili flakes according to your preferred spice level.
- Serve the dip warm to fully enjoy the melted parmesan and infused flavors.
- Pairs well with crusty bread, pita, or crackers.
- Store leftover dip covered in the refrigerator and consume within 2 days for best quality.
