Instructions

  1. Preheat the oven: Preheat your oven to 170°C (thermostat 6) to ensure it’s at the right temperature for even baking of the madeleines.
  2. Prepare the batter: In a mixing bowl, whisk together the eggs, sugar, and salt until the mixture turns pale and slightly frothy. Gradually fold in the flour and baking powder gently to avoid deflating the eggs. Next, incorporate the cooled melted butter carefully. Finish by adding lemon zest and, if you like, a few drops of orange blossom water for an aromatic touch. Optionally, you can also add chocolate pieces for a richer flavor.
  3. Fill the molds and bake: Once the batter is smooth and well combined, spoon it into madeleine molds that have been buttered and floured to prevent sticking (skip flour if using silicone molds). Bake in the preheated oven for approximately 10 minutes until the madeleines turn golden brown and develop their characteristic rounded hump on top.
