Spinach Mixture

  • 300 g Spinach (Blattspinat, thawed and drained)
  • 1 Onion (Zwiebel, sliced)
  • 2 cloves Garlic (Knoblauch, minced)
  • 200 g Sour Cream (Sauerrahm)
  • 1 tbsp Olive Oil (Olivenöl)

Topping

  • 150 g Mozzarella

Instructions

  1. Sauté Onions and Garlic: In a skillet over medium heat, heat 1 tablespoon of olive oil until shimmering. Add the sliced onions and sauté for 3-4 minutes, stirring frequently until translucent. Add minced garlic and cook for an additional 30 seconds until fragrant.
  2. Add and Cook Spinach: Stir in the thawed and drained spinach, cooking gently for 2-3 minutes until heated through and moisture has evaporated. Season with salt and pepper to taste.
  3. Mix in Sour Cream: Remove the skillet from heat and stir in the sour cream until the mixture is creamy and well combined.
  4. Preheat Oven: Preheat your oven to 175°C (347°F) to prepare for baking the salmon.
  5. Season and Sear Salmon: Slice the salmon into two portions if not already portioned. Season generously with salt and pepper. In a separate pan over medium heat, sear the salmon for about 2 minutes on each side to lock in moisture.
  6. Assemble in Baking Dish: Grease a baking dish and place the salmon skin-side down. Spread the creamy spinach mixture evenly over the salmon, then sprinkle the mozzarella cheese generously on top.
