Instructions

  1. Preheat the oven: Set your oven to 400°F (200°C) to prepare for roasting the sweet potatoes.
  2. Roast the sweet potatoes: Toss the diced sweet potatoes with olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Spread evenly on a baking sheet and roast for 40–45 minutes until tender and slightly caramelized.
  3. Sauté the onions: While the potatoes roast, heat a skillet over medium heat and add a bit of olive oil. Sauté the diced yellow onion until softened and translucent, about 5 minutes.
  4. Cook the ground beef: Add the ground beef and taco seasoning to the skillet with onions. Cook, breaking up the beef with a spatula, until the meat is browned and fully cooked through, about 8–10 minutes. Drain excess fat if needed.
  5. Assemble the bowls: In serving bowls, layer the roasted sweet potatoes, ground beef mixture, sliced avocado, and cottage cheese.
  6. Finish with hot honey: Drizzle 2 tablespoons of hot honey over each bowl for a sweet and spicy kick before serving.
