Sauce Ingredients

  • 1/4 cup fresh dill
  • 1/4 cup fresh chives
  • 1/4 cup fresh cilantro
  • 1/2 shallot
  • 1/3 cup high quality extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • 1/2 cup cottage cheese (I use good culture)
  • 1/4 cup plain Greek yogurt (I use Greek Gods)
  • 1/4 cup pasta water
  • 1 tsp salt (more if needed)
  • 1/2 tsp pepper (more if needed)

Pasta

  • 8 oz of your favorite pasta (I used Mafaldine)
  • 1/2 cup freshly grated Parmesan cheese

Instructions

  1. Boil Pasta: Bring a large pot of salted water to a boil and cook 8 oz of your favorite pasta (such as Mafaldine) until al dente, following package instructions. Reserve 1/4 cup of the pasta cooking water before draining.
  2. Blend Sauce: In a blender, combine fresh dill, chives, cilantro, shallot, extra virgin olive oil, lemon juice, cottage cheese, Greek yogurt, salt, pepper, and the reserved pasta water. Blend until the mixture is smooth and creamy. Taste and adjust salt and pepper as needed.
  3. Heat Sauce: Pour the blended sauce into a skillet and warm it over low heat to gently heat the sauce without breaking its creamy texture.
  4. Toss Pasta and Sauce: Add the cooked pasta to the skillet with the warmed sauce. Toss carefully until the noodles are fully coated with the sauce.
  5. Add Cheese: Stir in the freshly grated Parmesan cheese until it melts into the sauce and combines well with the pasta.
