Ingredients

Scale

Roll Ups

  • 1 lb thinly sliced roast beef
  • 1.5 cups shredded mozzarella or provolone cheese
  • 4 large flour tortillas
  • 2 tablespoons melted butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley

Au Jus Sauce

  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt & pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easy.
  2. Assemble Roll Ups: Lay the flour tortillas flat on a clean surface. Evenly distribute the thinly sliced roast beef and shredded mozzarella or provolone cheese across each tortilla.
  3. Roll Tortillas: Roll each tortilla tightly from the bottom up, folding in the sides to keep the filling secure and prevent the cheese and beef from spilling out during baking.
  4. Prepare Roll Ups for Baking: Brush the outside of each rolled tortilla with the melted butter. Sprinkle evenly with garlic powder, onion powder, and dried parsley to add a flavorful and aromatic crust.
  5. Bake: Place the prepared roll ups on the lined baking sheet and bake in the preheated oven for 12–15 minutes, or until the tortillas are golden brown and the cheese has melted perfectly.
  6. Make Au Jus: Meanwhile, in a saucepan, combine beef broth, Worcestershire sauce, soy sauce, garlic powder, onion powder, salt, and pepper. Bring to a simmer over medium heat and cook for 5–7 minutes to develop rich, savory flavors.
  7. Serve: Remove the baked roll ups from the oven and slice into bite-sized pieces. Serve warm alongside the hot au jus dipping sauce for a comforting and delicious meal or appetizer.

Notes

  • Use thinly sliced roast beef leftover from a roast or deli-quality for best results.
  • Feel free to swap mozzarella or provolone for your favorite mild melting cheese.
  • To make these gluten free, substitute flour tortillas with gluten-free tortillas.
  • For extra crispy roll ups, broil for 1–2 minutes after baking, watching carefully to avoid burning.
  • Au jus can be made ahead and reheated gently before serving.
