Roll Ups
- 4 large flour tortillas, about 12 inches in diameter
- 8 slices provolone cheese, thinly sliced
- 12 ounces deli roast beef, freshly sliced
- 1 cup French fried onions, store-bought or homemade
- 2 tablespoons extra virgin olive oil
Au Jus Sauce
- 1 can (10.5 ounces) beef consommé
- 1 cup water
- 1 tablespoon Worcestershire sauce
- 2 teaspoons low sodium soy sauce
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- Preheat Oven and Prepare Pan: Set your oven to 425°F (220°C) and line a rimmed baking sheet with parchment paper for easy removal and cleaning.
- Assemble Roll Ups: Lay one tortilla flat. On half of it, place 2 slices of provolone cheese, followed by roughly 3 ounces of roast beef and a generous handful of French fried onions. Lightly brush the inside edge of the tortilla with olive oil.
- Roll and Arrange: Starting from the filled edge, roll the tortilla tightly, sealing the edge with the brushed olive oil to keep it closed. Place the roll seam-side down on the prepared baking sheet. Repeat with the remaining tortillas.
- Brush with Olive Oil: Lightly brush the tops and sides of each roll up with the remaining olive oil to help them crisp and turn golden during baking.
- Bake: Bake the roll ups for 8 to 10 minutes, rotating the baking sheet halfway through if needed, until the tortillas are golden brown and the cheese is beginning to bubble at the edges.
- Prepare Au Jus: While the roll ups bake, whisk together beef consommé, water, Worcestershire sauce, soy sauce, onion powder, and garlic powder in a small saucepan. Heat over medium and bring to a gentle simmer for 3 to 4 minutes until hot and fragrant.
- Rest and Slice: Once baked, transfer the roll ups to a wire rack and let them rest for 2 minutes to allow the cheese to set. Slice each roll up into halves or thirds for easier serving.
- Serve: Arrange the sliced roll ups on a platter and serve immediately with the warm au jus on the side for dipping.
Notes
- Use freshly sliced roast beef from the deli for best texture and flavor.
- French fried onions can be store-bought or homemade depending on preference.
- Brush the tortilla edges with olive oil to help seal the roll ups during baking.
- For a spicier kick, add a dash of hot sauce to the au jus.
- Serve immediately to enjoy the crispy tortilla and melted cheese texture.
