Instructions

  1. Boil the Noodles: In a medium pot, bring enough water to a boil to cover the rice noodles. Add the noodles and cook for 3-4 minutes or until they become soft and separated. Drain immediately and set aside to prevent overcooking.
  2. Prepare the Sauce: In a medium bowl, combine the coconut milk, peanut butter, red pepper flakes, hot sauce, soy sauce, fish sauce, and tomato ketchup. Whisk thoroughly until all ingredients blend into a smooth, creamy sauce.
  3. Sauté Aromatics and Combine: Heat cooking oil in a wok or wide skillet over medium heat. Add minced garlic, ginger, and thinly chopped onion, sautéing until they soften and become fragrant. Pour in the prepared sauce, then add the drained noodles. Toss the noodles thoroughly with tongs to evenly coat them with the sauce. Although the noodles will look very saucy initially, they will absorb the sauce as they finish cooking.
