Instructions

  1. Cook the Chicken: Heat olive oil in a large skillet over medium heat. Add diced chicken seasoned with garlic powder, onion powder, smoked paprika, salt, and black pepper. Cook for 5-6 minutes, stirring occasionally, until the chicken is golden and cooked through. Remove chicken from the skillet and set aside.
  2. Make the Creamy Sauce: In the same skillet, add minced garlic and sauté for 30 seconds until fragrant. Pour in chicken broth and simmer for 2 minutes, scraping any browned bits from the bottom of the pan to incorporate added flavor. Reduce heat to low and stir in heavy cream, cream cheese, shredded cheddar cheese, crumbled bacon, and ranch seasoning. Continue stirring until the cheeses melt completely, forming a rich and creamy sauce.
  3. Cook the Gnocchi & Combine: Add the uncooked potato gnocchi directly into the creamy sauce. Let the mixture simmer for 5 minutes, stirring occasionally, until the gnocchi are tender and cooked through. Return the cooked chicken to the skillet and stir to combine evenly with the sauce and gnocchi. If desired, mix in baby spinach and cook for an additional 1-2 minutes until the spinach wilts and blends into the dish.
