Chipotle Meatballs

  • 1 to 1.5 lb ground beef
  • 2 garlic cloves, minced
  • ½1 tsp chipotle powder (adjust based on spice preference)
  • ½ tsp cumin
  • Dash paprika
  • ½ tsp salt
  • 1 tbsp almond flour
  • 1 tbsp coconut aminos

Sauce for Meatballs

  • ¼ cup coconut aminos
  • 1 tbsp balsamic vinegar
  • Dash chipotle powder

Green Beans

  • ½ to 1 lb green beans
  • Salt to taste

Instructions

  1. Cook Sweet Potatoes: Fill a large pot with water and bring to a boil over high heat. Peel and cut the sweet potatoes into large chunks. Add them to the boiling water and cook until easily pierced with a fork, about 25 minutes.
  2. Prepare Meatball Mixture: While the potatoes cook, combine ground beef, minced garlic, chipotle powder (½ to 1 tsp depending on spice preference), cumin, paprika, salt, almond flour, and 1 tbsp coconut aminos in a bowl. Mix well and form into 12 to 16 evenly sized meatballs.
  3. Cook Meatballs: Heat a large skillet over medium heat. Add the meatballs and cook for 3 minutes on one side. Flip each meatball and cook another 3 minutes on the other side.
  4. Add Sauce and Simmer: Flip the meatballs again and add ¼ cup coconut aminos, 1 tbsp balsamic vinegar, and a dash of chipotle powder to the skillet. Stir to coat the meatballs evenly and cook for around 5 minutes, stirring occasionally, until the meatballs reach an internal temperature of 160°F.
  5. Drain and Mash Sweet Potatoes: Drain the cooked sweet potatoes using a strainer. Return the pot to the stove and add butter or ghee, minced garlic, and almond milk. Warm for about 2 minutes, then add the sweet potatoes back in and mash until smooth. Season with salt to taste.
  6. Cook Green Beans: Steam the green beans by your preferred method, such as microwaving, steaming in a pot, or sautéing in a skillet. Season with salt to taste and serve alongside meatballs and mashed sweet potatoes.
