Ingredients

Scale

Protein

  • 1 lb chicken breast, boneless, skinless

Vegetables

  • 2 cups cabbage, chopped
  • 1 large carrot, julienned
  • 1/2 batch green onions, chopped
  • 2 garlic cloves, pressed

Noodles

  • 12 oz chow mein noodles (uncooked)

Sauce

  • 4 Tbsp oyster sauce (adjust to taste)
  • 3 Tbsp low sodium soy sauce
  • 3 Tbsp light sesame oil (not toasted)
  • 1/2 cup chicken broth
  • 1 Tbsp cornstarch
  • 1 Tbsp granulated sugar

Cooking Oil

  • 3 Tbsp olive oil

Instructions

  1. Prepare the Sauce: In a small bowl, whisk together oyster sauce, granulated sugar, light sesame oil, low sodium soy sauce, chicken broth, and cornstarch until fully combined and set aside.
  2. Cook the Noodles: Cook chow mein noodles according to package directions, then drain and rinse with cold water to stop the cooking process. Set noodles aside.
  3. Cook the Chicken: Heat a large wok or skillet over medium heat with olive oil. Cut the chicken breast into bite-sized strips. Add the chicken strips to the hot pan and cook until golden brown and fully cooked through. Remove the chicken from the pan and set aside.
  4. Sauté the Vegetables: In the same pan, add the julienned carrots, chopped cabbage, and pressed garlic. Sauté for a few minutes until the vegetables soften slightly and the cabbage turns translucent.
  5. Combine and Simmer: Return the cooked chicken and drained noodles to the pan with the vegetables. Pour the prepared chow mein sauce over the ingredients. Stir everything together and cook for an additional 2 minutes, allowing the sauce to thicken and evenly coat the noodles, chicken, and veggies.
  6. Garnish and Serve: Remove from heat, garnish with chopped green onions, and serve the chow mein hot straight from the pan for the best flavor experience.

Notes

  • Oyster sauce amount can be adjusted according to taste preferences.
  • Using light sesame oil instead of toasted helps keep a milder flavor.
  • Cold rinsing noodles prevents them from sticking and overcooking.
  • Feel free to substitute vegetables like bell peppers or snap peas for variety.
  • Leftover chow mein can be reheated gently on stovetop or microwave, adding a splash of broth if dry.
