Ingredients

Scale

Lasagna Noodles

  • 12 lasagna noodles, cooked and cooled

Filling

  • 2 cups cooked chicken, shredded
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 cup shredded mozzarella cheese (half for filling)

Sauce & Topping

  • 1 jar (15 oz) Alfredo sauce
  • 1/2 cup shredded mozzarella cheese (remaining half for topping)
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat and Prepare: Preheat your oven to 375°F (190°C) and grease a baking dish to prevent sticking.
  2. Mix Filling: In a mixing bowl, combine the ricotta cheese, half of the shredded mozzarella, grated Parmesan, beaten egg, garlic powder, and Italian seasoning. Mix until well blended to create a creamy filling.
  3. Assemble Rolls: Lay each cooked lasagna noodle flat and spread a generous layer of the ricotta mixture over it. Top evenly with shredded cooked chicken, then drizzle with Alfredo sauce. Carefully roll up each noodle and place seam-side down in the prepared baking dish.
  4. Add Sauce and Cheese: Pour the remaining Alfredo sauce evenly over the rolled noodles in the dish. Sprinkle the remaining shredded mozzarella cheese on top for a cheesy crust.
  5. Bake Covered: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. After that, remove the foil and continue baking for an additional 5 to 10 minutes until the cheese on top is melted and golden brown.
  6. Garnish and Serve: Once baked, remove from the oven and sprinkle chopped fresh parsley over the rolls for a fresh, colorful finish. Serve warm and enjoy your comforting chicken Alfredo lasagna rolls.

Notes

  • For best results, use freshly cooked chicken or leftover roasted chicken.
  • You can substitute shredded rotisserie chicken for convenience.
  • Be sure to cook noodles al dente, so they hold their shape when rolled.
  • Covering the dish during baking prevents drying out; removing the foil at the end allows the cheese to brown beautifully.
  • Use low-fat cheese options to reduce fat content if desired.
