Ingredients

Scale

Dry Ingredients

  • 2 1/4 cups All-purpose flour
  • 1/2 cup Unsweetened cocoa powder (preferably Dutch process)
  • 1/2 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1 tsp Salt

Wet Ingredients

  • 1 cup Unsalted butter (melted and cooled)
  • 3/4 cup Brown sugar (packed, light or dark)
  • 3/4 cup White granulated sugar
  • 1 tsp Pure vanilla extract
  • 2 Large eggs (room temperature)

Add-ins

  • 1 cup White chocolate chips (plus extra for topping)
  • 1/2 cup Semisweet chocolate chips (plus extra for topping)
  • 1 cup Fresh cherries (washed, pitted, and quartered)

Instructions

  1. Prepare the ingredients: Melt the butter in the microwave and allow it to cool to room temperature, about 10-15 minutes. Meanwhile, wash, pit, and quarter the fresh cherries to have them ready for mixing.
  2. Preheat the oven: Set your oven to 350°F (175°C). Line two cookie sheets with parchment paper to prevent sticking and set aside.
  3. Mix dry ingredients: In a medium mixing bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking powder, baking soda, and salt until evenly combined. Set this dry mix aside.
  4. Combine wet ingredients: In a large mixing bowl, add the melted and cooled butter, brown sugar, white sugar, vanilla extract, and room temperature eggs. Use a rubber spatula to stir gently until the mixture is smooth and fully combined.
  5. Incorporate dry ingredients: Gradually add the dry ingredient mixture to the wet mixture and stir until just combined into a soft dough.
  6. Add chips and cherries: Fold in the white chocolate chips, semisweet chocolate chips, and quartered fresh cherries evenly throughout the dough.
  7. Scoop the dough: Using a large (3oz) cookie scoop, portion the dough into balls and place 6 on each prepared cookie sheet, spacing them adequately for spreading.
  8. Bake: Bake one cookie sheet at a time in the preheated oven for 13-15 minutes, until the cookies appear set but still soft in the middle.
  9. Add toppings while warm: Immediately after removing from the oven, top the warm cookies with additional white and semisweet chocolate chips, pressing them gently into the tops.
  10. Cool cookies: Let the cookies remain on the hot baking sheet for 10 minutes to firm up, then transfer them to a cooling rack to cool completely before serving.

Notes

  • For the best flavor, use Dutch process cocoa powder for a richer chocolate taste.
  • Room temperature eggs help achieve a smoother batter and better texture.
  • Fresh cherries add moisture and a tart contrast; ensure to pit and quarter them to distribute evenly.
  • Using a large cookie scoop helps achieve uniform cookie sizes and consistent baking.
  • Baking one sheet at a time ensures even heat distribution and consistent baking results.
  • Letting cookies rest on the baking sheet after baking helps them set and prevents breaking when transferring.
